What is my other passion?? Baking. To put it simply, my kids and I love baking. We don't even really eat the sweets, but the process is our favorite. Mixing the ingredients together, making an absolute disaster of our kitchen and making memories together. And the creative outlet is just a plus.
I am sure most people who know us have had some of our "famous cupcakes" or should I say "famous frosting". That is the one thing everyone raves about.... "what is in this amazing frosting?" It doesn't matter what kind of creation we have come up with...strawberry cupcakes with our 'cream cheese butter cream frosting' and fresh berries on top, cheesecake flavored cupcakes, chocolate hazelnut cupcakes....its always the frosting.
Well, friends. I am going to share our recipe with you! I am always glad to make them, but with busy wedding season approaching, I am afraid the bakery will have to wait.

Cream Cheese Butter Cream Icing Recipe
1 block (8oz) of cream cheese - Room Temp.
1 stick (4oz) of butter - Room Temp
a splash of vanilla (approx 1 tbsp)
3/4 of a bag of powdered sugar (Healthy, I know)
Mix cream cheese and butter together until smooth. Add vanilla. Slowly add powdered sugar till its the consistency you are looking for. Less powdered sugar, the more cream cheese you will taste. More powdered sugar the thicker it will be, and sweeter it will taste.
And that's it! It is a very simple but super yummy recipe that will wow anyone. Put the frosting in a piping bag design away. Top your cupcakes with fresh fruit, candy, chocolate or in the cupcakes pictured above we used fondant and cut out little hearts, wet them with a little water till they were tacky and sprinkled edible glitter on them.
